I think that in every country there is a gastronomic history that contains a translation and correspondence of historical events and flavors present in the evolution of nations. Mexico is an example of this, and has always marked us with the blood of moles and thick marinades that run through our veins.
I have reflected that "the Mexican gastronomic homeland" is feminine because of its sensitivity, talent, beauty, strong personality and unique flavors, among other wonders. Our land is fertile and often endures so much that it screams, but in its kindness it gives us carved gems that are part of our crown, spun like filigree of sublime dishes.
